Polenta Please
Gluten Free and Dairy Free Polenta Appetizer Recipe
Ingredients:
1 can organic sweet corn
1/4 cup and 2 tbsp almond milk yogurt plain
1 1/2 limes juiced
1 1/2 tbsp water
1 roll of Gluten Free, Organic Polenta sliced in 1/4 inch thick circles
1/2 tsp cayenne
1/2 tsp paprika
1/4 cup micro greens
Vegan Chipotle Mayo
Directions:
1) Preheat a pan or grill on medium-high heat.
2) Warm the sweet corn.
3) Whisk the yogurt, lime juice, and water together until smooth.
4) Brush the pan with grape seed oil and grill the polenta circles for 2-3 minutes on each side. As they finish transfer to a serving platter.
5) Top each grilled polenta with a dollop of lime yogurt, corn, micro greens, cayenne, paprika, and drizzle chipotle mayo on top.
